BLT Sandwich

Ingredients

Bacon:

  • 6 to 8 strips bacon

Sandwich assembly:

  • 2 large ripe tomatoes, sliced and lightly seasoned
  • Crisp lettuce leaves
  • 4 slices soft white sandwich bread, lightly toasted
  • 2 to 3 tbsp mayonnaise
  • Freshly ground black pepper
  • A little salt for the tomatoes

Directions

Bacon:

  1. Cook the bacon until deeply crisp, then drain it well so it stays crunchy in the sandwich. Slice the tomatoes and season them lightly with salt and black pepper.

Sandwich assembly:

  1. Lightly toast soft white bread. Use the kind of bread that stays quiet in the background so you taste the bacon, tomato, and lettuce first, not the bread itself. Spread mayonnaise generously on both sides.

  2. Layer lettuce, plenty of tomato, and lots of crispy bacon, then close the sandwich, press gently, and cut in half. Serve immediately while the contrast between crisp bacon, juicy tomato, and cool lettuce is still sharp.
