A hearty bacon, egg, and cheese breakfast burrito made with fluffy buttery scrambled eggs, crispy thick-cut bacon, and melted cheddar, all wrapped in a fresh homemade tortilla. Serve with your favourite sauce.

Make your tortillas from scratch according to your preferred recipe and keep them warm wrapped in a clean towel.
Cook bacon in a pan over medium heat until crispy. If using whole slices, chop after cooking. Transfer to a paper towel-lined plate. Pour off excess bacon fat but keep a little in the pan for flavour.
Crack 8 eggs into a bowl, season with salt and pepper, and whisk well. Melt 3 tbsp butter in a pan over low-medium heat. Add the eggs and scramble slowly, stirring constantly, pulling the curds together until just set and still slightly glossy. Remove from heat immediately.
Lay a warm tortilla flat. Add a portion of scrambled eggs, top with crispy bacon, then finish with a generous handful of grated cheddar. Fold in the sides and roll tightly into a burrito. Serve immediately with your sauce of choice.
