Crispy gouda cheese rolls filled with ham, mayonnaise, and paprika for a savory appetizer

Mix 3 tbsp mayonnaise with 1 tsp paprika (sweet) in a small bowl, then stir in the finely diced bell pepper. Stir until well combined, creating a paprika-mayo spread.
Lay out a slice of gouda cheese on a clean surface. Spread about 1 tbsp of the paprika-mayo mixture evenly over the cheese.
Layer 2-3 slices of ham on top of the paprika-mayo spread.
Add another thin layer of paprika-mayo on top of the ham.
Roll tightly from one end, tucking in the sides as you go to seal the filling inside. Continue until all ingredients are used, making approximately 10-12 rolls.
Heat a pan or griddle over medium-high heat. Place rolls seam-side down and cook for 2-3 minutes per side until the gouda is melted and the exterior is golden and crispy.
Remove from heat, dust lightly with extra paprika for color, and serve warm as an elegant appetizer.
