Crispy gouda cheese rolls filled with sautéed spinach, garlic, and creamy cheese for an elegant appetizer

Heat 2 tbsp butter in a large pan over medium heat. Add 3 minced garlic cloves and sauté until fragrant, about 1 minute.
Add 400g spinach to the pan. Sauté until wilted and any excess moisture evaporates, about 5-7 minutes. Stir occasionally.
Season the cooked spinach with 1/4 tsp nutmeg and pepper to taste. IMPORTANT: Do NOT salt the spinach mixture.
Remove spinach from heat and let it cool slightly. Once cooled, fold in 100g of soft cheese until well combined.
Take a slice of gouda cheese and place about 2-3 tbsp of the spinach-cheese mixture in the center. Roll tightly, tucking in the sides as you go.
Continue rolling until all spinach mixture is used, making approximately 10-12 rolls.
Heat a pan or griddle over medium-high heat. Place rolls seam-side down and cook for 2-3 minutes per side until the gouda is melted and the exterior is golden and crispy.
Remove from heat, let cool slightly, and serve warm as an appetizer for guests.
Optional: drizzle with extra virgin olive oil or serve with a light yogurt sauce on the side.
