Combine rolled oats, chia seeds, milk, Greek yogurt, and maple syrup. Stir well, cover, and refrigerate overnight.
Mash a ripe banana into a puree. Add to the base with cinnamon and vanilla extract. Refrigerate overnight. Top with banana slices, maple syrup, and chopped walnuts.
In a saucepan over medium heat, combine raspberries, maple syrup, and vanilla extract. Whisk until softened into a smooth puree. Cool completely. Mix into the base with peanut butter. Refrigerate overnight. Top with raspberries, chopped walnuts, and maple syrup.
Mix pineapple chunks and coconut flakes into the base. Refrigerate overnight. Top with more pineapple chunks, coconut flakes, and chopped walnuts.
Mix espresso or coffee and cocoa powder into the base with a pinch of salt. Refrigerate overnight. Top with chopped walnuts, coconut flakes, and crushed chocolate.
Mix peanut butter and cocoa powder into the base. Make chocolate syrup by combining melted coconut oil, cocoa powder, maple syrup, and a pinch of salt — pour over the top. Refrigerate overnight. Top with blueberries and/or raspberries.
Mix blueberries, lemon juice, lemon zest, and vanilla extract into the base. Use plant-based milk only — NOT cow milk, as lemon will cause it to curdle. Refrigerate overnight. Top with blueberries and coconut flakes.
