Overnight Oats 6 Ways

Ingredients

Base:

  • 1/2 cup (55 g) rolled oats (1 serving)
  • 1 tbsp chia seeds
  • 1/2 cup (125 g) milk (almond milk recommended)
  • 1/4 cup (60 g) Greek yogurt
  • 1 tbsp maple syrup

Banana bread:

  • 1 ripe banana (mashed into puree)
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • Toppings: banana slices, maple syrup, chopped walnuts

PB&J:

  • 1 cup raspberries + 1 tbsp maple syrup + 1/2 tsp vanilla extract (cook into puree)
  • 2 tbsp natural peanut butter
  • Toppings: raspberries, chopped walnuts, maple syrup

Pina colada:

  • 1/4 cup pineapple chunks
  • 1 tbsp coconut flakes
  • Toppings: pineapple chunks, coconut flakes, chopped walnuts

Mocha latte:

  • 1-2 shots espresso or 1/4 cup coffee
  • 1 tbsp cocoa powder
  • Toppings: chopped walnuts, coconut flakes, crushed chocolate

Chocolate peanut butter cup:

  • 2 tbsp peanut butter
  • 1 tbsp cocoa powder
  • Chocolate syrup: 1 tbsp melted coconut oil + 1 tsp cocoa powder + 1 tsp maple syrup + pinch of salt
  • Toppings: blueberries and/or raspberries

Lemon blueberry pie:

  • 1/4 cup blueberries
  • 2 tbsp lemon juice + 1 tsp lemon zest (from 1 lemon)
  • 1/2 tsp vanilla extract
  • Toppings: blueberries and coconut flakes
  • NOTE: do not use cow milk for the lemon version — use almond, cashew, or other plant milk to avoid curdling

Directions

Base:

  1. Combine rolled oats, chia seeds, milk, Greek yogurt, and maple syrup. Stir well, cover, and refrigerate overnight.

Banana bread:

  1. Mash a ripe banana into a puree. Add to the base with cinnamon and vanilla extract. Refrigerate overnight. Top with banana slices, maple syrup, and chopped walnuts.

PB&J:

  1. In a saucepan over medium heat, combine raspberries, maple syrup, and vanilla extract. Whisk until softened into a smooth puree. Cool completely. Mix into the base with peanut butter. Refrigerate overnight. Top with raspberries, chopped walnuts, and maple syrup.

Pina colada:

  1. Mix pineapple chunks and coconut flakes into the base. Refrigerate overnight. Top with more pineapple chunks, coconut flakes, and chopped walnuts.

Mocha latte:

  1. Mix espresso or coffee and cocoa powder into the base with a pinch of salt. Refrigerate overnight. Top with chopped walnuts, coconut flakes, and crushed chocolate.

Chocolate peanut butter cup:

  1. Mix peanut butter and cocoa powder into the base. Make chocolate syrup by combining melted coconut oil, cocoa powder, maple syrup, and a pinch of salt — pour over the top. Refrigerate overnight. Top with blueberries and/or raspberries.

Lemon blueberry pie:

  1. Mix blueberries, lemon juice, lemon zest, and vanilla extract into the base. Use plant-based milk only — NOT cow milk, as lemon will cause it to curdle. Refrigerate overnight. Top with blueberries and coconut flakes.
