Whisk the eggs, egg yolks, cinnamon, sea salt, brown sugar, and nutmeg until smooth. Whisk in the heavy cream and milk, then pour the custard into a shallow dish.
Slice the toast bread. Dunk each slice for only a few seconds so it picks up custard but does not become sodden.
Heat a large pan with melted unsalted butter and cook each slice about 3 minutes per side until deep golden.
Serve warm with a small knob of butter and maple syrup—keep sweetness moderate—or add savoury sides on the plate.
