Simple old-school cookies made from rice cereal, eggs, margarine, sugar, and baking powder. Light, crispy outside, and soft inside.

Beat eggs with sugar until very light and fluffy. Gently fold in melted and cooled margarine.
Mix rice cereal with baking powder, then add to the wet mix in batches until you get a thick batter/dough. Let it rest for 5 minutes so the cereal hydrates.
Scoop small mounds onto a parchment-lined tray. Bake at 180 C for 12 to 16 minutes until lightly golden on the edges. Cool on a rack.
