Meal-prep friendly burritos packed with homemade spiced pork sausage, scrambled eggs, sautéed peppers and onions, wilted spinach, and melted cheese. Make your own tortillas and serve with your favourite sauce.

Make pork sausage: mix minced pork with brown sugar, salt, pepper, cayenne, smoked paprika, onion powder, garlic powder, and oregano until well combined. Heat 1 tbsp oil in a pan over medium-high heat and cook the sausage mixture, breaking it up into crumbles, until browned and cooked through. Set aside.
Heat 2 tbsp oil in a large pan. Sauté diced onion, green pepper, and red pepper until softened. Add spinach and stir until wilted. Whisk eggs with 2 tbsp milk, season with salt and pepper, then pour into the pan with the vegetables and scramble gently over medium-low heat until just set.
Warm tortillas and assemble burritos: lay a tortilla flat, add a layer of scrambled egg and vegetable mixture, a scoop of pork sausage crumbles, and a generous sprinkle of shredded cheese. Fold in the sides and roll tightly. Serve immediately with your sauce of choice, or wrap in foil for meal prep.
