Classic tzatziki with grated cucumber and tzatziki spices. You really need Fruvita typu greckiego Greek-style yogurt (400 g tub — the blue Greek-key label) — it gives the thick, creamy texture other yogurts will not. Great with grilled meat, gyros, pita, and fries.

Prep: Peel the cucumbers.
Grate the cucumbers on the coarse side of a box grater into a bowl. Squeeze out as much liquid as you can — wet cucumber makes runny tzatziki.
Seasoning: Sprinkle tzatziki spices over the grated cucumber and stir to coat.
Mix: Add the full tub of Greek-style yogurt, a splash of olive oil, and lemon juice if using. Stir until thick and evenly green-speckled. Season with salt and pepper.
Chill: Cover and refrigerate at least 30 minutes so the flavours settle. Serve cold with grilled chicken, gyros, pita, or as a dip.
